3.1 Meringues 1

I tried to make meringues today and failed. Unfortunately, after whisking the egg whites and mixing in the sugar, I ended up with a rather runny mixture which would be no good at all for meringues. I either whisked the eggs too much or not enough, according to the recipe books.

Anyway, all was not lost. I just mixed in a few more ingredients and hey presto: brownies! (Again).

    I’m not great at meringues either – not patient enough. I always just want to chuck all the sugar in at once and whisk it fast but I’m told slowly and bit by bit is the way to go. My mum has always been adamant that anything less than a 100% clean bowl will ruin the meringue too.
